Mas produces Auvergne delicatessen since the 1930's. Each year it comes to the Sommet de l'Elevage to promote those local and home-made receipes : Aligot, Truffade, Sausage and above all the Tripoux, pieces of veal tripe slowly cooked with white wine, carots, and seasoning.
