Numerous studies confirm the positive impact of marbling (intramuscular fat) on consumer perception of beef. That's why INTERBEV, in collaboration with IDELE, is working on introducing marbling measurement into the industry and monitoring it on farms. The aim of this work is to improve the taste quality of meat to better meet consumer expectations.
